Playing is lawful for anyone aged 18 or over, and the offence in the Gambling Act 2005 falls on operators — and on advertisers — who target Great Britain without one, not on the player. Do you pay tax on gambling winnings?

Not as a player. Gambling winnings are not treated as income in the UK, so there is no income tax, no National Insurance and nothing to declare on a Self Assessment return. The duty is paid by the operator, not by you. Where it stops being simple is what happens afterwards — interest earned on the money, or gains if you invest it, are taxed like any other interest or gain.
